Owned by a dynamic husband and wife duo, Mohammad and Michelle Assal, this dining hotspot promises a unique twist on traditional Mediterranean food. Mohammad Assal, who moved to the United States from Palestine, has always had a knack for food and flavors. Growing up, he worked in his father’s pita bakery and developed a deep appreciation for creating quality food at a young age. As he got older, he pursued a degree in accounting and went on to work in the business world. Although very talented in what he was doing, he knew it was not where his heart was. With a burning desire to create something of his own, Mohammad embarked on an ambitious journey that led him to move to the U.S. and become part of the vibrant food truck scene in California.

“He came to this country with nothing but a dream and complete belief in God and himself,” said Michelle. “[He] arrived in Fresno with $100 in his pocket and told himself that he had to leave behind any pride or notion that he ‘used to do this for work, make that much money’ and start from the bottom. He was the best dishwasher, server, driver, prep cook, chef, and manager that you could be, and that gave him the opportunity to learn everything he needed to own his own restaurant.”

Together, the couple rented a food truck and set their sights on creating Kabab Twist. The name itself encapsulates their vision perfectly: a fusion of flavors that allows them to draw inspiration from both their cultural backgrounds, his being Mediterranean and hers Mexican. Little did they know that their delectable dishes would make such an impact on the community.

Their first taste of success came through Fresno Street Eats, a platform that provided them with meaningful exposure. When Kabab Twist made its debut in Kingsburg, the response was overwhelming. The community’s support was so immense that Mohammad realized he needed to expand his team to keep up with the demand.


And so, their journey continued, culminating in the recent opening of their stunning new restaurant in Kingsburg’s Village Mall. The Assals were astounded by the incredible support they received from the mall management and the City of Kingsburg. “It felt like we knocked on all the doors. This one finally opened!” said Michelle. It was a true testament to the spirit of collaboration and community that makes this region so special.

One of the most heartwarming aspects of Kabab Twist is the strong family bond at its core. Mohammad and Michelle’s children play an integral role in the restaurant’s operations. Their daughter, Lillia, who has been involved since the beginning, spends her summers working at Kabab Twist when she is home from Sonoma State, where she is currently studying field biology. Their son, Jarrett, lends a hand on weekends, juggling his full-time job with his family’s culinary venture.

When asked about their favorite part of owning a restaurant, Michelle passionately explains the joy they derive from giving back is the overwhelming favorite. Having previously worked in the nonprofit sector, she found solace in using her skills to make a positive impact on her employees, her family, and her community. “The blessings that we are able to give to other people – those things multiply. We are so happy to be able to give back to others.” says Michelle. Their family philosophy is “the more we give, the more God gives back to us.”

Now, let’s talk about the food—the mouthwatering, tantalizing dishes that have everyone talking. One of the standout favorites is the Spicy Kabab Plate. Picture succulent chicken marinated in a special spicy sauce, grilled to perfection, and served over a bed of fragrant rice. One of the fan favorite twists comes from the inspiration drawn from Asada fries, a delightful fusion of flavors that combines crispy fries with jack and cheddar cheese, grilled meat, onions, peppers, and a drizzle of sauce.

If you’re worried about the spice, fear not! The Assals have taken care of everyone’s taste buds. The spicy sauce adds just the right amount of kick, but for those who crave more heat, a fiery chili sauce called “shutta” is provided on the side.

And the excitement doesn’t end there! Starting this month, Kabab Twist introduces their flame grill, offering a delectable selection of BBQ skewers featuring chicken, beef, lamb, kafta, and lamb chops. These dinner portions are a true treat for meat lovers, bringing a whole new dimension to their menu.
