Hold on! That’s cheese we’re talking about, and there are over a thousand types, each with a different combination of the animal source, its diet, added enzymes to speed coagulation, pasteurization, butterfat, and aging. It happened. My daughter and I got sick of our own cooking. After three months of “It Came From My Kitchen,” we (and my wife) couldn’t take any more variations of Slow-Cooker Surprise and “Stuff Added to Packaged Mixes,” but our editor didn’t want us going to restaurants and dining like nothing was wrong with the world, even if they were open for business. Since we often go out to eat on Friday nights, clam chowder—New England Clam Chowder (the white stuff)— is my option of choice. This Great Food Search went to great lengths to give you reviews. Yes, there are restaurants in the Valley that we sampled, but we found ourselves all the way out to Monterey’s Fisherman’s Wharf!
